Stuffed karela Recipe in Bengali, Bitter gourd recipe, Bengali Food, Stuffed karela Bangla recipe. This is famous Bengali Food Bitter gourd recipe. There are so many types of Korola Bangla Recipe in Bengalis like Korola Vaja, Korolar dal, korola peyaj posto etc. This is one of my best recipes. This is not pure Bengali Recipe; I have seen this recipe in south India, Hyderabad and in Marathi people. I learned this recipe from my best Marathi friend. Bitter gourd recipe is famous in all over India. I made this recipe in my style. Today I will show you how to make Stuffed karela recipe? This is not actually Bitter gourd curry but type of curry. This is very easy recipe but it is taking time to prepare. 

Ingredients:
  • Bitter gourd 200 grams
  • Chopped Onion 1 big size
  • Chopped Tomato 1 medium size
  • Boiled Potato 2 tbsp
  • Sunflower Oil
  • Salt to taste
  • Ginger Garlic paste 1 tsp
  • Chili Powder ½ tsp
  • Turmeric Powder ¼ tsp
  • Mango Powder ½ tsp
  • Garam Masala Powder, Coriander and Cumin powder 1 tsp 

How to make Stuffed karela recipe?

  1. Scrape the Bitter gourd/ karelas. Keep the scrapings; I will prepare the mixture with this.
  2. Slit the Bitter gourd and remove the seed from it. Do it for all the Bitter gourd/ karelas.
  3. I am not using the seeds because it is hard.
  4. Now take the scrapings in a bowl and salt 2 tsp. Mix it properly and keep it for 15 minutes.
  5. Now take a jar and add salt. Add Bitter gourd/ karelas in it and boil it for 10 minutes in a low flame.
  6. After 10 minutes, take it out from the water.
  7. Now take the scrapings and remove the water from it through hand pressure. Keep it in cold water. Wash it properly and take it out. Before put in a jar, squeeze it properly.
  8. Now take boiled Bitter gourd/ karelas and squeeze it to remove the water.
  9. Heat the pan and oil 2 tsp.
  10. Add chopped onion, fry it well.
  11. Add Garlic and Ginger paste, turmeric and chili powder. Fry it well.
  12. Now add scrapings of Bitter gourd, chopped tomato. Stir it little.
  13. Add salt as per your taste and cover it for 3 minutes.
  14. After 3 minutes open the cover and stir it and again cover it for 3 minutes.
  15. Open the cover and it is ready.
  16. Now add boiled potato and add roasted coriander and cumin powder, Garam Masala powder and Mango Powder. Mix everything well and smashed the potatoes.
  17. Mixture is ready for the stuffed karela/ Bitter gourd.
  18. Now add mixture in the boiled Bitter gourd as much as possible and press it well. Otherwise it will come out in frying time.
  19. Take a thin thread and tied it.
  20. Remaining mixture I will use in serving time.
  21. Heat the pan and add oil. I used more oil you can use less oil for the fry bitter gourd.
  22. Now add karelas in the oil for fry.
  23. Cover it for few minutes.
  24. Open the cover and flip the karelas and cover it again. Do this 2-3 times
  25. Stuffed karela is ready. Now take it out from the pan.
  26. Remove the thread before serve and add remaining mixture.

Hearing the name of Bitter gourd many people raised nose and mouth but many people prefer the taste of Bitter Gourd. Others simply can not take it for its bitter taste. But Bitter gourd has lot of health benefits. The regular habit of eating bitter gourd can cure variety of diseases. There is lot of nutrients which is very essential for the body.

Almost all year round Bitter gourd is available in the market. It is famous as Fried, mashed or broth as well as curry also. Others do not want to eat because of bitter. However, the taste is more than acceptable to all for its Health Benefits. In Asia, for thousands of years it has been used as a medicine.

Blood Problems:
Take two ounces juice of Bitter gourd per day with a little lemon juice mixed drink on an empty stomach. With in 4 to 6 months of blood contaminated material will be removed. Get rid of the problem can be caused by allergies.

Diabetes:
It has an enzyme Edinosina manophasapheta activated protein, called kaineja. It increases the ability of the body's cells to take sugar. Bitter Gourd juice increase the glucose metabolize inside the body's cells. As a result, blood sugar levels can be reduced. So diabetes patients will benefit from taking regular Bitter Gourd juice.

Eye Problems:

There is plenty of beta-carotene or vitamin A in Bitter Gourd. Beta-carotene is very useful to keep good eyesight. Those who have eye problems can eat Bitter Gourd regularly.

Resistance to disease:
The regular habit of eating bitter gourd increased disease resistance. Eat Bitter gourd regularly can cure cough, fever and other minor problems.
