To me Hilsa fish means sorse ilish or fried ilish. There are no comparison with the taste of Hilsa fish. Hilsa is the king of fish. Hilsa fish always comes to mind in the rain day.

Let’s see the ingredients for the Sorse ilish-
  • Hilsa fish 2 pieces 200 grams
  • Green chili 3 cut into 2 pieces
  • Salt to taste
  • Mustard Seeds Paste 1 tbsp
  • Panch Foron very little
  • Turmeric Powder
  • Chili powder ½ tsp
  • Mustard oil 1 tbsp

How to make Shorshe Ilish recipe?


  • First I will marinate the Hilsa fish with salt and turmeric powder.
  • Mix it properly.
  • Keep it for 5 minutes.
  • Now heat the pan.
  • Add oil on it.
  • After heating the oil add fish. Before frying the fish always try to heat the oil nicely. Otherwise fish will stuck in the pan.
  • Flip the other side for fry.
  • Fry the fish both side well. No need to fry Hilsa fish brown color like other fish.
  • Hilsa fish is fried now; take it out from the pan.
  • Keep 1 tbsp oil and remaining oil remove from the pan. I will use it later.
  • Add Panch Foron, Green Chili, Mustard Seeds paste, turmeric powder and chili powder. Fry it little in the oil. No need to fry the spices too much. May be mustard seed paste will be bitter.
  • Add 2 cups water, you can use water how much gravy you want according to that.
  • Add salt in it.
  • Keep it for two minutes.
  • Now add fried hilsa fish.
  • After one minute flip the fish other side.
  • Again keep it for one minute.
  • Now use the oil which I kept after fried the fish.
  • Leave it for one minute.
  • Shorshe ilish is ready.
