Begun Bahar: Spicy Brinjal Fry Recipe

Begun Bahar/ Spicy Eggplant recipe is very easy and quick recipe with in 20 minutes you can prepare it. It is famous for it taste. There are different types of Begun/ Brinjal recipes in Bengal. I used mustard Oil for this recipe. I also used Tomato, Capsicum, Green chili, Onion and some Indian spices.

Ingredients For Begun Bahar:

Eggplant/ Begun 1 medium size
Sliced Tomato ½
Sliced Capsicum ½
Sliced Green Chili 2 nos
Sliced Garlic
Red Chili 2 nos
Pinch of Nigella seeds
Mustard oil 2 tbsp
Cumin and Coriander Powder ½ tsp
Chili powder ½ tsp
Turmeric Powder ½ tsp
Chopped onion 1 big size
Salt as per taste

Method For Begun Bahar:

* Cut the Begun/ Eggplant in to 6 pieces.
* Add salt, pinch of Turmeric & Chili powder. Mix everything well.
* Heat the Pan and Add oil, I used Mustard Oil.
* Add Chili and Nigella seeds. Stir it 3-4 times.
* Add Sliced Garlic and stir it 2-3 times and add all the sliced Begun/ Eggplant. Stir it.
* I will make the Begun Bahar in a low flame.
* Cover it for 2 minutes.
* Add Sliced Onion. Fry the Brinjal and onion well.
* Again cover it for 2 minutes.
* Add sliced Tomato, Capsicum, Turmeric Powder, Chili Powder, Cumin and Coriander Powder and salt to taste.
* Stir it well and cover it again for 2 minutes.
* It will cook in a low flame, so you have to cover and open again and again.
* Add sliced Green Chili and pinch of Mustard oil.
* Stir it nicely for few minutes.
* Now Begun Bahar is ready.
