Shukto Recipe, How to make Bengali shukto Recipe? Today I will prepare Bengali famous “shukto recipe”. Shukto is a Bengali Traditional recipe prepare with lots of vegetables. I hope every one like this Bengali shukto recipe. I will show you how to make Bengali shukto? This is the traditional method for this recipe. There are different ways to make this recipe. Shukto is very famous recipe in Bengal.

Let’s see the Ingredients:
  • Brinjal
  • Bitter gourd 50 grams
  • Raw banana 1
  • Potato 2 medium size
  • Drum stick 1
  • Beans 100 grams
  • Bari -beaten Pulse dried in the sun (this ball is eaten after being fried or cooked).
  • Green chili
  • Ginger and Mustard seeds paste 1 tsp
  • Salt to taste
  • Turmeric powder ½ tsp
  • Mustard Oil
  • Ghee 1 tsp
  • Bay leaves 1, Red chili 2, Panch foron 1/2 tsp
  • Vaja Masala 1 tsp (Cumin Seeds 1/2 tsp, Cardamom 2, Cloves 4, Cinnamon 1)

Method for the Shukto Recipe:
  • Heat the pan and add oil 1 tsp
  • Add beans and fry it.
  • Take it out from the pan and keep it in bowl.
  • Add 1 tsp oil and add Bitter gourd for fry. Fry it well and take it out.
  • Again add 2 tsp oil. Add bay leaves, whole red chili and panch foron. Stir it little.
  • Add potato and fry it little.
  • Add green banana, fry it well.
  • Now add green chili, brinjal and drum stick. Stir it 2-3 times well.
  • Add Ginger and Mustard seeds paste, turmeric powder and little water. Now fry the spices with the vegetables.
  • Now add more water for boil the vegetables.
  • Add fried bitter gourd and beans.
  • Add salt as per your taste,
  • Add the bari and mix with everything.
  • Now add some water.
  • Cover it for 5 minutes.
  • After 5 minutes open the cover and stir it. Again cover it for 5 minutes.
  • Now broke some potatoes for the thickness of the gravy.
  • Add ghee and mix it with the curry. When the ghee is mixed switch off the gas.
  • Add vaja masala in it. No need to mix it. Mix it properly in serving time.
  • Now shukto is ready.

Ingredients:
  • Flour 1 cup
  • White oil
  • Salt to taste
  • Pinch of baking powder.
  • Garam Masala Powder ¼ tsp
  • Pinch of Turmeric powder.
  • Pinch of Fennel
  • Boiled Potato 2 medium size
  • Ground Nut 2 tsp. Fry in the pan with some oil and remove the skin and separate the nuts from each other.
  • Roasted Cumin Seeds ½ tsp
  • Chopped Onion 1 big size
  • Chopped Coriander leaves 1 tsp
  • Whole Red chili 4, fried in the oil and smashed with the hand.
  • Ginger Garlic paste ½ tsp

Methods for making the Samosa: 
  • First I will prepare the flour. Add pinch of baking powder in the flour. Add salt as per your taste. Mix it properly with the flour.
  • Add 2 tsp oil. For making samosa dough its needed more oil. Now mix it properly with flour.
  • Now add some water for making the dough. Be sure the dough will not dilute. Always add water as per your requirements. Don’t add water at a time. Dough is ready.
  • Now cover it for 15 minutes.
  • Now I will prepare inside mixture for the samosa.
  • Heat the pan and 1 tsp oil.
  • Add Fennel in it. Little fry it.
  • Add chopped onion now. Fry the onion.
  • Add Ginger Garlic paste. Mix it with onion and fry it little.
  • Add boiled potatoes in it and smashed it but not totally. Make it like small pieces.
  • Add salt, Graram Masala, roasted Cumin seed powder, Turmeric Powder, fried Ground nuts and smashed red chili. Mix it properly and fry all the things.
  • Add chopped Coriander leaves.
  • I used boiled potatoes; you can make it with small pieces of potatoes, but you have to use some water for boil the potatoes.
  • The mixture is ready for the samosa.
  • Leave it for cool.
  • Now make two balls from the dough. I will make 4 samosa from it.
  • Now I will make the roti using some flour. Make the roti lengthwise. Because I will make 2 samosa from 1 roti. Roti is ready. Now separate it in two parts through a knife.
  • Add little water in the side of the roti where I cut. Now make it two parts and press through the fingers.
  • Take it left hand and fill it with the mixture. Make a fold in the excess side. Add some water in the other side.
  • Now join the both side and press it properly, otherwise it will be open when you frying this.
  • I will fry the samosa in the deep oil. So heat the pan with oil.
  • Add the samosa in it.
  • Be sure make it in a low flame.
  • If you make it in a high flame, it will fry the outside only not inside quickly and crispy will not come.
  • Fry the samosa both side properly.
  • It will take time to fry the samosa.
  • Now it is well fried. Remove the samosa from the oil. 
  • Samosa is ready. Serve it hot with some chutney or sauce.
